Roast Chicken and Root Vegetables


... 'I'm six days post-RNY surgery, but I wanted to get on my two feet and start cooking again and way some headway for my revamped The Pantry Panda website featuring my husband and my two dogs - not to mention how to make his dinner more bariatric friendly. Tonight's dinner was a test run of how my film crew will stage in my kitchen. James and I haven't received our new dining room table - but the kitchen island is where he ended up having dinner tonight. I took the roasted onions, roasted carrots, and the roasted parsnips and puréed them and de-fatted the drippings from the chicken to make a 'strained yet flavored packed chicken soup.' If any of you guys or girls need a cooking lesson, come on over! We'll go food shopping and give you the tools you need to make some bariatric meals for you and your family which your family will be wanting more - well, you can't because your sleeve/pouch is to limited, ugh. THE STRUGGLE. IS. REAL." /totally wanted to kill that other half of chicken and munch on those blistered and crunchy potato skins

Roast Chicken and Root Vegetables - S (salt). Sugar. Garlic. Bay Leaves. Whole Fryer Chicken. P (pepper). LS (low sodium) Chicken Broth. Red Potatoes. Carrots. Parsnips. Yellow Onions. VO (vegetable oil).
