Cranberry Orange Oatmeal Cookies.


... "Cookies. Who couldn't resist eating these delicious discs which puts smiles on faces of children young and old. At work, I heard that some people couldn't celebrate Thanksgiving with their families and I felt that I had to cheer them up. I thought that my famous cookies would definitely turn their frowns upside down ...

Cookies aren't just a dessert. Cookies can be a meal all itself. I tend to make my cookies as big as one's head. What really made my day/night is to see the smiles of the faces, the warm hugs, and thanks ... and the tears of the remembering the comforts of home during the holidays with co-workers ... it gave me the warm fuzzy feelings. Pandas love warm fuzzy feelings - especially ... this one."

Lemon Meringue Cheesecake Pie.



... "Dessert is not one of my specialties; however, when Mark Ciale posted some pictures of his spanakopita using pâte brisée, I had to make something sweet and tart.

Lemon Meringue Cheesecake Pie: Salt. AP Flour. Vegetable Shortening. US Butter. Ice-Cold Water. Heavy Cream. Mascarpone. Cream Cheese. Sugar. Lemon Juice. Egg Yolk. Cornstarch. Cream of Tartar. Egg White.

Baking is a science. I usually eyeball measurements in the majority of my recipes, however; I didn't want to mess this up. I will say though, the final result of the LMCP was not just photogenic, but damn good delicious. James went out to take care of some errands for Thanksgiving by getting the 10-pound turkey that I ordered from my butcher ... I told him just before that he left that I was going to make something simple for dinner ... when he got home though, I surprised him with a piece of the LMCP - you should have seen the look on his face. We were both surprised how good it came out. James said, '[m]aybe you should bake more.' I responded, 'Meh, I'll think about it." /thinks about opening a bakery while eating the torched and smoked meringue ...

Tonkatsu Curry.


... "It's been a long week ... a very long week. I haven't cooked anything all week with the exception of a PBnJ sandwiches and making iced green tea. With Chiberia 2015 in full effect as of tonight, I needed some comfort food ... Japanese comfort food.

Tonkatsu Curry: OO. Onion. Carrot. Chinese Eggplant. Green Bell Pepper. Garlic. Ginger. Hot Madras Curry Powder. Diced Tomato. Water. Pork Bouillon. Bay Leaf. Hot Curry Block. Fuji Apple. Rakkyo. Fukujinzuke. Pork Chop. S & P. Egg. AP Flour. Panko. Peanut Oil.

I had the front door and the patio screen open and the whiffs of curry and aromatics simmering on the stove could have been smelled outside. While I was finishing up the tonkatsu, James came in and I told him, '[s]it down. I'll warm you right up.' I took a spoonful of the hot curry on the stove and told him close his eyes and taste it. I said, 'What do you taste?' He said, ' Your Love.' I teared up a little and was taken back. James hugged me and said, 'I love you.' ... I didn't know what to say back to James. Wally and Eva got his attention and I stepped back into the kitchen to make a plate for him. I returned to the living room and gave him his dinner. Before I gave it to him, I took a good look at James in the eyes and I said, "I love you too." /walks back into the kitchen and turns around to see James devouring and smiles ...

Braised Beef with Red Wine and Cherries. Basic Polenta.


... "The water damage to our home has been repaired and my kitchen is back up and running. A lot has happened in my life in last couple of months - professionally and personally ... and my kitchen has been calling my name and begging me to make comfort food once again. It took me all morning to put back only the essential kitchen equipment back in my kitchen. James keeps telling me to put away the gadgets and gizmos that I don't use on a regular basis. I think I succeeded - not to mention dinner from my kitchen ... it's been almost two months." /attempts on stacking dishes and pans in piles where James can't see them ...

Mexican Lasagna


... "I had to take Wally and Eva to the our vet a couple of weeks ago. Maria Pirita, one of the employees, saw my Mexican Lasagna that I made. She was telling me how I can change up my lasagna to make it more delicious and full of Mexican flavor. Her mom made something called 'Pastel Azteca.' I asked Maria to join me in the kitchen and this is what we decided to make ...

Mexican Lasagna

INGREDIENTS


12 Dreamfields Lasagna noodles
1/4 pound raw chorizo sausage
3 tablespoons vegetable oil, divided
2 dried ancho chiles, stemmed, seeded and chopped
1 large (8 ounces) Spanish onion, chopped
2 tablespoons tomato paste
6 large cloves garlic, minced
4 teaspoons dried Mexican oregano
1 teaspoon pepper
2 teaspoons ground cumin (preferably freshly ground from cumin seeds)
2 teaspoons ground coriander (preferably freshly ground from coriander seeds)
3 tablespoons all-purpose flour
3 cups unsalted fat-free chicken broth
2 pounds ground pork (85% lean)
8 scallions, sliced (separate white and green portions), divided
1 cup fresh cilantro, chopped, divided
4 tablespoons freshly squeezed lime juice
1 1/2 cups freshly shredded Chihuahua cheese
6 ounces queso fresco, crumbled (3 cups)
1/2 cup freshly grated queso Cojtia
2 large (about 4 ounces each) tomatoes, cored and chopped

DIRECTIONS
 
1. Preheat oven to 350°F.

2. Cook pasta according to package directions.

3. Meanwhile, heat 1 tablespoon of the oil in 12-inch nonstick skillet over high heat until shimmering. Add chorizo; cook and stir 1 minute or until it begins to render fat; set aside.

4. Toast chilies in a large skillet over medium heat, shaking pan constantly, 3 to 7 minutes or until fragrant. Transfer toasted chilies into blender container.

5. Heat remaining 2 tablespoons of the oil in large Dutch oven over medium to medium-high heat until shimmering. Add onion; cook 8 to 10 minutes or until softened, stirring occasionally. Stir in tomato paste; cook 1 to 2 minutes. Stir in garlic, oregano, salt, pepper, cumin and coriander; cook 1 to 2 minutes or until fragrant, stirring frequently.

6. Sprinkle in flour; cook and stir 1 to 2 minutes or until flour is blended into the onion mixture. Slowly add broth, stirring constantly and scraping any browned bits from bottom of Dutch oven. Continue cooking until sauce is slightly thickened, about 3 to 5 minutes, stirring frequently.

7. Add sauce to blender with chilies and process until smooth, about 30 to 40 seconds. Return sauce to Dutch oven. Add pork, breaking up with a wooden spoon or spatula. Cover; cook pork in sauce over medium to medium-high heat until fully cooked, about 15 to 20 minutes. Stir in scallion whites, 1/2 cup of the cilantro, and the lime juice. Set aside.

8. Combine Chihuahua cheese and queso fresco in large bowl; set aside.

9. Spread about 1/2 cup of sauce over bottom of 9x13-inch baking dish. Layer 4 lasagna noodles, 3/4 cup of sauce, 1/2 cup cheese mixture. Repeat with 4 more lasagna noodles, 3/4 cup sauce, 1 cup cheese mixture. Top with remaining 4 lasagna noodles, remaining sauce, chorizo, and remaining cheese mixture.

10. Cover baking dish with aluminum foil; bake 15 to 20 minutes or until cheese is melted. Remove aluminum foil; sprinkle with cojita cheese; bake 10 minutes. Remove from oven. Let lasagna stand about 10 minutes. Sprinkle with tomatoes, scallion greens and remaining cilantro.

While we were making this, I felt like I was an 'abuela' (grandmother) in my kitchen. The smell of chorizo cooking and the smell of roasted ancho chilies filled the house up. All we needed was some margaritas and some mariachi music to make this meal complete! The funny thing is that James was surprised that Maria was cooking my kitchen - I never let anyone in my kitchen when I'm cooking ... I told him, '[i]f you knew how to cook, I would let you help, but, I would rather feed you anyway." /hands a generous serving of Mexican Lasagna to James and watches him do a fail attempt at the Mexican Jumping Bean dance ...

One-Pan Roast Chicken and Potatoes.


... "This week has been crazy. I had a crappy week at work and my car died in the middle of the Express Lanes during the middle of Chicago's rush hour traffic - which eventually was a total loss. All weekend long - I have been doing car research and clearing my head of all the stress that I've endured. James insisted that we should have went out for dinner tonight, but cooking cleared my mind and I felt a sense of accomplishment when I presented ...

One-Pan Roast Chicken and Potatoes: OO. Thyme. Smoked Paprika. Lemon Zest. Lemon Wedges. S & P. Whole Chicken. Yukon Gold Potatoes.

I wanted to make something simple with minimal mise en place and cleanup - not to mention something elegant for a Sunday night dinner. I don't know what it is when I cook - but I feel so stress-free and the weight of the world has fallen off my shoulders. My moment of zen has come and passed. Now, I have to get back to the 'real world,' but I don't want to. Who really does though?" /takes a deep breath and savors every juicy delicious bite ...

Mexican Lasagna with Pork, Corn, and Pinto Beans.


... "Finally, I'm back to my old self again. I bought a new car and I don't feel stranded at home. I will say not having a car was killing me. After waiting all morning to get Victory Auto Wreckers to junk my car this afternoon, I desperately needed to restock our pantry and refrigerator. My international supermarket specializes in Mexican items ... after watching the Masterchef USA - Season 5 finale over the weekend ... i need to make something Mexican inspired.

Mexican Lasanga with Pork, Corn, and Pinto Beans: VO. Onion. Red Bell Peppers. S & P. Garlic. Chipotle Chiles in Adobo Sauce. Chili Powder. Ground Pork. UB-AP flour. LS Chicken Broth. Pinto Beans. Diced Tomatoes. Corn. Cilantro. Lime Juice. Corn Tortillas. VO Spray. Colby Cheese. Monterey Jack Cheese.

Going back deep into my memories, I haven't really made Mexican food - other than eating at many restaurants in the Pilsen neighborhood and eating the local/street fare near my house - I haven't really delved into it. I'm glad I did. James was surprised too ... he was expecting something Filipino or a 12-piece box of fried chicken and a large white rice for dinner on a Tuesday night. Not today.
